Cherry Chipotle Chicken Lollipops

Ingredients: 

12-14 Chicken Legs 

Loot N' Booty BBQ | Gold Star Chicken Rub

CornCookers | Poultrygeist Returns Spicy Chicken Rub 

Loot N' Booty BBQ | CHERRY CHIPOTLE BBQ SAUCE 

Directions:

While we’re doing a little prep on these Chicken Lollipops, go ahead and fire up your smoker. We’re going to run these at a consistent temperature of 275F. 

Prep:
First, we gotta get our Chicken Legs into Lollipop form! For this, you’ll need a good sharp knife - We recommend the Messermeister | STIFF BONING KNIFE 6" - PRO SERIES for this job. With the leg laying flat, we’ll go right up to the knuckle and make a cut to the bone, all the way around the leg. Make sure to get that tendon to free the meat, you’ll be able to slide everything down, forming your Lollipop. Clean up that knuckle as best you can of any unwanted fat/tendon. 

Once you’ve gotten all your Lollipops formed. It’s on to the seasoning. We’re going to give these a healthy dose of Loot N’ Booty - Gold Star Chicken Rub, with a little dose of Corncookers - Poultrygeist Returns for a little kick! You can add a small piece of foil on the trimmed knuckle to protect the bone from getting ugly if you’d like. 

The Cook:

This is the easy part! Place all your beautiful seasoned, flavor packed Lollipops directly on the grill grate with the meat side down and that bone sticking up proudly! We’re going to let these go at 275F for roughly 1 ½ hours. We want the internal temperature to reach at least 175F. As we get close to  that target goal (with about 20 minutes left in the cook) we’re going to sauce these Lollipops with Loot N’ Booty - Cherry Chipotle BBQ Sauce. This is going to add another layer of deliciousness!

The Dunk:

Warm that sauce up in a pan/cup and prepare for the dunk. We like to you a cup or glass jar for this so we can just dunk those beautiful Lollipops right in, coating all sides. Again, we’ll sauce these with about 20 minutes left in the cook and return them to the smoker to caramelize! 

Once those Lollipops have reached 175F IT and have been properly dunked and caramelized, it’s time to enjoy. This is sure to impress your friends and family with its beauty and tastiness!
