Tators w/ all the Fixins
Ingredients:
- 1.5 Lb Bag of Baby Red Potatoes
- 1 Stick of Butter
- Handful of Crumbed Bacon
- ½ Red Onion
- 1 Jalapeno
- Corncooker’s GPS Rub
Prep:
Slice up your ½ red onion, dice your jalapeno, crumble your bacon and add it to a mixing bowl. Season with GPS and toss, coating all the goodies.
The cook:
Boil the baby red potatoes for 8 minutes, getting them tender but not falling apart. Add the boiled potatoes to a half pan with half the stick of butter sliced up. Toss the potatoes to get them covered in butter. Season with Corncookers GPS Rub (heavy). Add your fixings on top of the potatoes, with the other half of butter sliced up. Hit em with a little more GPS to take those Tators to flavortown!
On to the smoker (225-250) uncovered for 30 minutes. This will give them the hint of smoke flavor! After 30 minutes, toss/mix the pan integrating all those flavors. Cover your pan with Aluminum foil and turn the temperature up to 300. Let them ride for another 30-45 minutes ( usually 2-3 beers ) while you prepare the rest of your meal. Pairs well with a big ole Ribeye Steak!
