1 Lb. Prairie Fresh Prime Bacon
1 pack Snake River Farms Gourmet Franks
1 8 oz. package of Cream Cheese
1 Cup Shredded Cheese
Sweet Rub ( We prefer Smokehouse 72 Sweet & Savory )
Blues Hog Raspberry Chipotle
Mix your filling:
Dice up your jalapeno(s). Mix with softened Cream Cheese & Shredded cheese until it’s all evenly integrated. Dust with Sweet rub.
Make your Cups:
- Slice your Gourmet Franks (or Sausage) into ½” pieces
- Cut bacon in half
- Wrap bacon around your beef/sausage chucks forming a little cup, using a toothpick to hold it together.
- Take a spoon full (shots worth) of your filling and add it to your bacon wrapped cup.
- Dust the tops with your sweet rub.
Set your smoker to 275-300 degrees. Throw your shots in that bad boy! Let em smoke until the bacon gets a nice color on it ( usually 45 minutes or so ). At that point, give them a little drizzle over the top of Raspberry Chipotle Sauce. Back on the smoker for 5 minutes.
